Carrot Cake: Family Recipes

My mother made this a lot around holidays or when out of town relatives were visiting.  It was oh so good!  Particularly with whipped topping...  (she used the baby food and was very very moist!)




CARROT CAKE


1 1/4 cup salad oil         
4 eggs                   
2 cups sugar                  
2 tsp. baking powder         
1/2 tsp. baking soda      
1 tsp. salt   
2 cups flour          
2 tsp. cinnamon
3 cups grated carrots (can use 4 small jars baby carrots or 2 junior jars)
1 cup chopped nuts (optional)

Combine oil and sugar, mix well.  Stir in rest of ingredients alternating dry and wet with 4 eggs.  Bake in 10 inch tube pan.  Bake in a floured and grease bunt pan in a slow oven at 325 degrees for 1 hour 10 minutes.  Cool upright in pan.  When cool cut out of pan to release cake.  You may put icing on cake.  Cream cheese icing is pretty good.  See cookbook section for icings.  Very rich!  Cake is good plain.  It is very moist.

Chili w Quinoa (nutritional information included)

Servings: 16
Yield: 128 ounces
Preparation Time: 40 minutes
Start to finish: 2 hours 40 minutes

 Yeild and Servings are approximate as well as times...


4 cups Quinoa, Prepared in Vegetable Broth
2 cups vegetable broth
1/2 teaspoon chili powder1/4 teaspoon Red pepper flakes
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1/2 teaspoon dried onion flakes
1/4 teaspoon dried oregano
1 dash liquid smoke flavoring
1 clove Garlic
1 medium Onion, diced small
2 medium Carrot, diced small
2 stalks celery, diced small
1/2 medium Red bell Pepper, diced small
1/2 medium yellow bell pepper, diced small
1/2 medium orange bell pepper, diced small
1/2 medium green bell pepper, diced small
5 ounces baby Bellas, rough diced
1 bag corn with red and green peppers
1 cup v-8® vegetable juice
2 cans Crushed tomatoes
2 cans diced tomato
1 large can chili beans in zesty sauce
2 small black beans, canned
2 small garbanzo beans, canned
1 small pinto beans, canned
2 tablespoons chili powder
1 teaspoon chipotle pepper
1 teaspoon cumin
1 teaspoon cinnamon
6 ounces beer
3 cups v-8® vegetable juice
1/4 cup Brown sugar
1 tablespoon instant coffee powder, I use instant espresso coffee
3 bay leaves, whole
1 bunch cilantro, chopped fine


1. prepare quinoa with vegetable broth and add chili powder, red pepper flakes, cumin, cinnamon, onion flakes, oregano, and a dash of liquid smoke.  Bring to boil for 3-4 minutes and add frozen corn with red and green peppers, boil for 2-3 more minutes.  Remove from heat, cover, and let steep for 15-20 more minutes.


2. Heat a large soup pot, add 2-3 teaspoons of vegetable oil and when it is hot add onion, saute until translucent. (2-3 minutes) add carrot, celery, and bell peppers, saute another 2-3 minutes and add garlic, saute until fragrant then add another dash of liquid smoke.  Deglaze pan with beer and 1 cup of v-8 juice.


3. Add all cans of tomatoes, one at a time.


4. Slowly add beans one can at a time, starting with red kidney/chili beans, black beans, garbanzo beans, and pinto beans.  Then add the rest of the V-8 juice.


5. Bring to boil and reduce heat to simmer.  Add seasonings one at a time and stir in completely.  Simmer for 30-40 minutes, adjust seasongs to your desire. Stir in one bunch of chopped Cilantro and serve hot.

Sweet Potato Casserole





This has been a family staple for years at most all major dinners. Holidays, celebrations, potlucks, and office parties: everytime other people love this dish and ask to have the recipe... Enjoy!



SWEET POTATO CASSEROLE 
(Aunt Marcia)

1 large can sweet potatoes 
1 stick oleo/butter 
2 eggs 
dash of cinnamon
1 can of condensed milk 
2 cups sugar

TOPPING
1 cup crushed corn flakes 
1/2+ cups nuts (walnuts are best) 
1/2 cup brown sugar 
1 stick oleo

Heat potatoes, drain juice - mash potatoes until smooth. Then add oleo, eggs, cinnamon, sugar, and milk. Mixture will fill a 9 x 13 greased pan. Cook 15-20 minutes at 400 degrees or until you can take a toothpick out clean. Mix topping. Sprinkle on top and cook an additional 15 minutes.

You can heat potatoes in microwave. You can also bake dish in microwave. Sometimes I cook the first part on one day, then freeze or refrigerate after adding topping and cook another day.

BBQ Baked Beans


I wrote this recipe for Heartland Range & Shooter's Saloon where I was the GM. Goes well with any grilled or smoked foods. So if you are planning to BBQ, give this a try! Enjoy!


BBQ Baked Beans


1 Large Can of Bush's Baked Beans (flavor of your choice)

1 Small Onion Diced

1/4 c Crumbled Bacon

1/8 c Dark Brown Sugar

1/8 Cup BBQ Sauce (your favorite flavor, I use Sweet Baby Rays)

1 TBL Ground Cinnamon

1/8 tsp Red Pepper Flakes



Combine all ingredients in a mixing bowl. Place in a greased cast iron or heavy oven proof pan and bake in a 325 degree oven. Bake approx. 35-45 minutes or until bubbly on the edges.


Serve Hot...
